Gilles Ferran Cotes due Rhone "les Sablieres" 2007

Proprietor Gilles Ferran has enlisted the services of the great Philippe Cambie (Clos St. Jean, Clos du Caillou, Pegau, countless others) to help craft the wines and the results have been immediate and superb. The classic Rhone varieties of Grenache (70%). Syrah (20%) and Carignane (10%), all produced from 30-40 year old vines on steeply sloping, high altitude hillsides, and clean, careful vinification in cement tanks makes a profoundly intense wine with haunting balance and lift for its size. You owe it to yourself to try a bottle (or case) of this fantastic red!

Cheese Pairings: Gruyere, soft goat milk cheese, Ricotta Salata
Food Pairings: Seafood Stew, Risotto Pescatore made with Shrimp, Squid and White Fish, Asparagus, Mushrooms
